The three things that move the odds

Party size. Two and four behave differently at most restaurants, sometimes by tens of percentage points, and each restaurant page states which is easier at that specific room.
Time. Early and late seatings are consistently more available than the 7:30 everyone is competing for. At several restaurants we have never once recorded a 7:00 to 8:30 PM table opening.
Being told rather than checking. Cancellations do not follow a schedule, which is exactly why refreshing by hand does not work.

Does party size change how easy it is to book?

Substantially. Tables for two are the most contested inventory at most restaurants, while four often has more give, and parties above six frequently move to a different booking path or a private room with its own rules. Trying an adjacent size is usually more productive than trying an adjacent hour.

What if nothing is available on the exact date?

Star the restaurant and let the alert do the waiting. Cancellations cluster in the last 48 hours before a date, so a fixed-date booking that looks full three weeks out is often catchable in the final days.
