Twelve of these restaurants showed a bookable table on 0% of the days we checked across the tracked window, which means a diner refreshing the calendar by hand would have found nothing every single time. This ranking is measured as of August 2026 and re-checked every 15 minutes, so it reflects live booking behavior rather than a reputation from a year ago.
The list spans tasting-menu temples, decades-old institutions, and buzzy newcomers, and it is not sorted by fame. A room is hard because its tables vanish the instant they appear, and that is what our snapshots measure: how often a party of two could actually have booked.
