When we last read the Tock calendar, on 19 October 2026, Jungsik had a bookable table on 24 of the 30 dates in the window, 80 percent, and the same 24 for a party of four. We have checked that calendar 3,920 times, so this is measured behaviour rather than a happy week.
Monday is dark, closed on all 626 Monday checks we have made, which accounts for most of the six closed dates. Of the nights it serves, Thursday is the loosest in our records at 97.7 percent of checks finding something open, then Wednesday at 96.1 and Friday at 95.9. Saturday sits at 92.4, Sunday at 90.3, and Tuesday is the hardest at 85.6 percent.
A gap of twelve points between the easiest and hardest night is small enough to ignore for most plans. Put plainly: if you want to eat at Jungsik on a given date about a month from now, you can probably book it, and almost nothing else in this cluster is true in that sentence.

The prime hour, and at Jungsik prime time has a specific shape. Across 13,168 open slots we have recorded there, not one was at 7:00 or 7:30 PM. The evening seatings that appear in our data run 5:00, 5:30, 6:00 and 6:30, then jump to 8:00, 8:30, 9:00 and 9:30, so the 7:00 to 8:30 PM band we measure is entirely the 8:00 and 8:30 sittings here. Together they are 23 percent of everything we have seen open.
The single most frequently open time is 5:00 PM at about 17 percent, followed by 9:30 PM at about 15 percent. Roughly a quarter of open slots were before 6 PM and roughly a quarter were 9 PM or later. So the room is generous with its early and late seatings and thin in the middle, which is the usual signature of high demand meeting a fixed number of chairs.
The consequence for you is narrow and useful. The date is easy at Jungsik. The 8:00 PM seat on a Friday or Saturday is not, and that is the one booking here that behaves like a hard New York reservation. If you want it, be on Tock at 11:00 AM the morning that date opens, a month out, with your card ready.
One caveat we repeat on every page: these percentages describe the times left open when we looked, not Jungsik's service hours. A time is common in our data because it survives being wanted, not because the kitchen favours it.

For most dates that is the entire process, because 24 of the next 30 were open when we looked.

I Sodi, a West Village Italian room, was open on 0 of 30. There is no reliable path from prestige to availability, only measurement.
That is the whole reason we watch a short list. A service advertising tens of thousands of restaurants cannot tell you that Jungsik's 7 PM seating has never once appeared in its data, because that only surfaces if you check the same calendar every few minutes for months.
We also never book. The alert arrives, and you complete the reservation on Tock yourself, in your own name, at the restaurant's own price, card details included. We do not hold tables, resell them, or put a booking in a stranger's name, which is the line between an availability alert and the paid-reservation market New York's 2024 law was written to stop.
