Because availability sits at 0% for both two-tops and four-tops, getting in almost always means catching a cancellation, which means watching Resy continuously rather than checking it now and then.
Tuesday, then Saturday. Of the 200 openings we have recorded, 59 were Tuesdays, 48 Saturdays, 46 Wednesdays, 24 Fridays and 23 Thursdays. No Sunday or Monday check has ever found a table. The strong Saturday showing is unusual for a room this hard and worth using.
More often than at easier restaurants, oddly enough. Of the 562 open slots we have sampled, 17% fell between 7:00 and 8:30 PM, against 4% at Lilia and none at all in 296,926 samples at Cote. Nearly everything that opens here is a cancellation, and cancellations mirror what people booked, which is mostly prime time.
Resy, and only Resy. There is no phone line or second platform holding its tables, so Resy is where the noon release happens and where every cancellation reappears. Watching Resy closely, or having something watch it for you, is the entire booking game at Tatiana.

At no fixed hour. They surface as guests change plans, and each freed seat is bookable only until the next person sees it, often a matter of minutes. Because they are unpredictable and brief, an alert that fires the instant a table opens beats any amount of refreshing Resy by hand.

Our own logs back the noon rule up from the other direction: across 119 release events observed on 21 separate days, the hour we most often recorded new Tatiana dates appearing was 1:00 PM, which is what a noon release looks like to a checker that sweeps the calendar and finds the change shortly after it happens.
Our reading of the calendar stops 27 days beyond today rather than 28, because a restaurant counts today as day one and a calendar reader does not. Neither count is wrong. If you are unsure by a day, be on Resy at noon on both days, which costs nothing and removes the only ambiguity in the plan.
Tatiana books on Resy and nowhere else, so there is no phone line to try and no second platform where a table might be hiding. We have run 614,135 availability checks against its calendar, part of 61,530,416 checks across the 284 restaurants we follow in New York, San Francisco, Los Angeles and Chicago, and a short list watched constantly is the only reason a page like this can tell you an hour and show its work.
Tatiana is among the very hardest tables in New York. A two-top was open on 0% of the dates in the current 30-day window, and so was a four-top. Across 614,135 checks of its calendar we have caught an open table 200 times in total, which is a better sense of the scarcity than any percentage on its own.
A 0% reading does not mean Kwame Onwuachi's Lincoln Center dining room never seats anyone. It means a table almost never sits open long enough for a normal person to find it and book it. Load Resy on a random afternoon and the calendar will almost always be empty, because the noon release is claimed in seconds and what comes back afterward comes back briefly.
Tatiana is one of 22 New York restaurants on our list of 80 that sit at 0% for a two-top, and one of only 14 that are at 0% for both party sizes. Don Angie is in that same group, and the two rooms have almost nothing else in common: different platform, different window, different release hour. What they share is a hard ceiling on covers and a wall of people arriving at the same second.
Bringing more people does not help here, which is worth knowing before you try it. At Cote a four-top was open on all 30 dates while a two-top managed 0%, and at Semma a four-top reached 0% against 0%. At Tatiana both party sizes read zero.

Tuesday first, and Saturday second, which is unusual for a room this hard. Of the 200 openings we have recorded, 59 were Tuesdays out of 87,951 Tuesday checks, 48 were Saturdays, 46 were Wednesdays, 24 were Fridays and 23 were Thursdays. Sunday and Monday have never shown us an open table.
The Saturday number is the surprise. At most hard restaurants the weekend is the dead zone, as it is at Semma, where Friday and Saturday together produced 11 of 86 openings. At Tatiana, Saturday produces nearly as many as Tuesday. A room with this much demand cancels on a Saturday too, and those cancellations are the openings we catch.
Read a night we have never seen open as a night not to build a plan around rather than as a stated closure. What we can say is that no Sunday or Monday check has ever found a table here, across tens of thousands of checks.

More often at an hour you actually want than you would expect. Of the 562 open slots we have sampled at Tatiana, 17% fell between 7:00 and 8:30 PM. That is the highest prime-time share of any room in this cluster: four times Lilia's 6%, and infinitely more than Cote, where not one of 296,926 sampled open slots landed in that window.
The rest of the distribution is what you would expect. Half the open slots were 9:00 PM or later, a third were early, before 6:00 PM, the most frequently open slot is 9:30 PM, and the latest we have ever seen is 9:45 PM. The earliest is 5:00 PM.
There is a reason the hardest room has the best hours, and it is worth understanding because it decides your strategy. Almost everything that opens at Tatiana is a cancellation, and cancellations are a mirror of what people booked in the first place, which is overwhelmingly prime time. At a restaurant with open inventory you fight for 7:30 and lose. At a restaurant with no inventory, 7:30 is simply what other people are giving back.
The catch is duration. A freed prime-time seat at a room this wanted is bookable for minutes, sometimes less. The hour is favorable. The window is brutal.
Two things, in this order. Be on Resy at 12:00 PM Eastern on the day your date enters the 28-day window, because that is the one moment when inventory exists in volume. Then, for every day after that, stop refreshing and let something watch for you, because from then on the only tables are cancellations.
Cancellations do not arrive on a schedule. They surface as plans change, parties shrink and deposits get reconsidered, and each freed seat belongs to whoever sees it first. A table released at 4:00 PM on a Tuesday is invisible unless something is checking Tatiana every few minutes, and no person can sustain that for a week while holding down a job.

That is the practice New York's 2024 reservation law was written to address, and a reservation bought that way is a reservation in somebody else's arrangement rather than yours.
