Its most common open seat is 11:30 AM, the latest we have seen is 11:30 PM, and across 18,139 recorded open slots 0% were prime time and 67% were before 6 PM. What little opens is mostly lunch or a very late table.
The release tells the same story from the other side. We have now observed 581 separate release events at Carbone over 63 days of watching, and the 10 AM drop 30 days out still leaves a two-top open on 0% of dates. That is not a restaurant hiding inventory. It is a crowd arriving in the same second for a room that seats a fixed number of covers.
What that means practically is that a plan for Carbone should specify the hour as well as the night. If you will take lunch or a late table you have a real shot, and if you need 8 PM on a Saturday you are chasing the slot the data says almost never comes free. The horizon matters as much as the hour, and this cluster spreads across it. Somssi opens 14 days out, Dame 21, Cecchi's 29, Carbone 30, Minetta Tavern 30, Golden Steer 30 and Huso 31. Setting an alarm for a room that never books a month ahead is the most common wasted effort in this neighborhood.
For the middle of the list the drop is a genuine strategy. Dame, Cecchi's, and Golden Steer all leave tables standing after release, so arriving at the roll with your party size chosen usually settles it. For the fully booked rooms the drop goes in seconds, and what most diners get is a cancellation that surfaces later and at no fixed hour.

The East Village and West Village pages show the same measurement applied a few blocks away, and the contrast is stark: the West Village has seven rooms at 0%, while here two are fully booked for two.
The hour of the evening is where the honest answer lives, and it is the part nobody else publishes. Minetta Tavern, at 42% for two, is largely an early room: 79% of its open slots are early seatings, the most common is 10:30 PM and prime time is 0%. So the famous burger is very gettable, and the 8 PM version of it is not the thing that opens.
Golden Steer is the useful outlier here. 30% of its open slots are prime time, with 10:00 PM the most common, and it is open on 97% of dates. If what you actually want is a steak at a normal hour on a normal night, that is the measured answer.
Huso runs 49% early and 50% prime, with 0% late. Dame runs the opposite way, 54% late with 9:30 PM leading. Cecchi's is the broadest room on the list, spanning 3:00 PM to 11:00 PM, which is why it is the reliable fallback when a group cannot agree on a time.
Days of the week move the odds as much as the hour. Thursday reads 98% at Huso and Wednesday 98% at Minetta Tavern, whose worst night is Saturday at 46%. Closed nights in our record: Huso on Mondays or Tuesdays, Dame on Sundays and Somssi on Sundays. An alert on those nights can never fire.
It can, in either direction. Of the Greenwich Village rooms we measure, three read higher for four than for two and two read lower. Minetta Tavern is open on 42% of dates for two and 77% for four. Dame reads 53% and 57%, and Huso 55% and 48%.
Cecchi's reads 97% and 97%, and Golden Steer 97% and 97%, which tells you their constraint is the night rather than the table shape. Somssi and The Eighty Six read 3% and 0% for four.
We measure both sizes on every check, which is the only reason a claim like that can be made. In the East Village, Penny reads 37% for two against 10% for four, so this is a per-room fact rather than a rule.
For the fully booked rooms, most tables come from catching a cancellation. The release leaves nothing, so the seats real diners sit in come from other guests giving theirs up. Those openings do not arrive on a clock. They surface at odd hours as plans change and parties shrink, and they cluster in the last day or two before a date, when someone who booked weeks ago finally admits they cannot go.
A seat freed at 4 PM on a Tuesday is invisible unless something is watching for it, and no person can refresh four platforms every few minutes for two straight days. We never book the table and we never hold one. You get the alert, you book in your own name, and you pay the restaurant's price at the door. Resale is the other model in this market, and it is the one New York's 2024 reservation law was written about: TableSwap advertises $75 per successful reservation. An alert takes nothing out of the restaurant's hands, which is also why restaurants do not fight it.
The practical routine is to try the drop once at the right hour, then hand the last two days before your date to an alert. Book Cecchi's or Golden Steer as a floor while you wait, because a good dinner you already hold makes it much easier to be patient about the one you want.
