We re-check each room's live booking page around the clock and record whether a table was bookable on every date in its window, at two party sizes, along with the slot times we see. The West Village accounts for 5,765,124 availability checks and 2,885 observed release events across eleven rooms, part of 61,530,416 checks against the 284 tables we track. Figures were measured as of 19 October 2026. A weekday we describe as never open is one where no bookable table has ever appeared in our checks, which usually means the room is closed that night.
By our last reading, L'Artusi (47%), Umeko (47%) and Dandelion (30%). Umeko rolls new dates at midnight, 29 days out on Resy, and runs 87% on Tuesdays against 17% on Saturdays. Note that 92% of Umeko's open slots and 91% of L'Artusi's are early seatings.

Buvette, French, Resy. Open on 0% of dates for two and 0% for four. Releases at 5 AM, 14 days out. Fridays or Saturdays book up before we see them, so aim for another night or catch a cancellation. Its slots run from 8:00 AM, and 75% of what opens is early.
Dandelion, cocktail bar, Resy. Open on 30% of dates for two and 27% for four. Rolls at midnight, 13 days out. It has not opened a table on Sundays or Mondays in our checks, which usually means it is closed then. This is the room here that leans to the evening: 27% of open slots are prime time and 38% are 9 PM or later.

This is the finding that matters most on this page, and it is invisible from a single availability score. L'Artusi reads 47%, which sounds like a coin flip on dinner. In fact 91% of its open slots are early seatings, the most common is 2:30 PM, and prime time is 0%. Umeko reads 47%, and 92% of its openings are early, led by 2:45 PM.
Via Carota is the same story at a lower number. It reads 0%, 96% of its slots are early, 2:00 PM is the most common, and prime time is 0%. I Sodi opens 98% early. Buvette runs 75% early and starts as early as 8:00 AM.
So the honest version of the West Village is that lunch and mid-afternoon are gettable and dinner is close to shut. If you have been told L'Artusi is bookable and then found nothing at 8 PM on a Friday, this is why, and the fault is not yours. A percentage without the hour attached is the kind of number that sounds helpful and sends you to the wrong page.
A few rooms buck it. Dandelion puts 27% of its open slots in prime time and 38% at 9 PM or later. Semma leans late at 49%, and Jeju Noodle Bar is 39% late, led by 5:00 PM. If you want a West Village dinner rather than a West Village lunch, those are the measured places to aim.

4 Charles Prime Rib is the one we cannot answer. Across 645,420 checks we have never recorded a release event or an open table, so any confident claim about its release hour would be invented. The useful thing we can say is what the absence means: whatever inventory exists is not reaching the public calendar in a way that a watcher can catch, so a cancellation alert is the only mechanism left.
Horizons matter as much as hours and are shorter here than people assume. Don Angie opens 7 days out. Dandelion runs 13, I Sodi 13, Buvette 14, Wild Cherry 14, L'Artusi 14 and Semma 15. Jeju Noodle Bar runs 29, Umeko 29 and Via Carota 30. Setting an alarm four weeks ahead for Don Angie cannot work, because the date does not exist yet.
For the rooms in the middle the drop is worth trying once. For the rooms at 0%, 2,885 observed release events across the neighborhood are the evidence that it is not the way in. Point your alerts at the nights a room serves. In our record, these West Village rooms have not shown a table on certain weekdays, usually because they are dark: Buvette on Fridays or Saturdays, Dandelion on Sundays or Mondays, Semma on Sundays, Umeko on Mondays and Don Angie on Thursdays.
Checking that list first will save more wasted effort than any amount of refreshing, because these are structural closures rather than sold-out nights. A night we list is one where no bookable table has ever appeared in our checks.
Where a room is open, the weekday spread can still be wide. Umeko sits at 87% on Tuesdays and 17% on Saturdays, a 70-point difference inside one restaurant. That is the number to plan around, and it is the reason a Tuesday in the West Village is a genuinely different city from a Saturday in it.

They cluster in the last day or two before a date, which is exactly when nobody has the patience left to keep checking.

For the rooms at 0%, the sensible shape is to hold a table at Umeko or Dandelion for the night you want and keep an alert running on the one you are chasing. If it fires you trade up. If it does not, you still eat in the West Village, which is the part a pure chase always forgets.
