Watch, rather than plan. Verjus runs a 7-day window per its own reservations page, so there is nothing to book a month out. It read 10% of dates open, and 64% of the 189,269 openings we have logged are before 6 PM, with 4:00 PM the single most common time. Friday returned an open table on only 10% of checks. It has not opened a table on Sundays or Mondays in our checks, which usually means it is closed then.
Take an afternoon on its best night, or watch the evenings. Cotogna returned an open table on 62% of our Wednesday checks and 7% of our Saturday checks. It has not opened a table on Sundays in our checks, which usually means it is closed then. More to the point, 95% of the 429,960 openings we have logged are before 6 PM, with 3:00 PM the most common, so an evening table there means waiting for a cancellation rather than catching a release.
Book the release on the 1st of the previous month, price a four-top, and aim at its best night. Quince's own site says reservations are released on the 1st of the month prior. A four-top read 40% of dates open against 40% for a two-top. Wednesday returned open on 57% of checks, against Saturday's 8%. It has not opened a table on Sundays or Mondays in our checks, which usually means it is closed then.
Kokkari Estiatorio is the most available room in Jackson Square: 30 of 30 dates open for two and 30 for four, with 17% of its openings in the 7:00 to 8:30 PM band. Its week is unusually flat, from 81% to 85% of checks returning a table. OpenTable carries 30 days, and an archived version of its own page says phone bookings reach 60.
Opposite ends of the evening, which is the most useful difference on this page. Across 456,188 logged openings at Quince, 5:00 PM is the most common and 40% fall between 7:00 and 8:30 PM. At Cotogna, 95% of 429,960 openings are before 6 PM and 1% land in that prime band. Quince releases dinner. Cotogna releases the afternoon.
Verjus, Cotogna and Quince all book on SevenRooms, and Kokkari on OpenTable. SevenRooms pages are usually reached through the restaurant's own website rather than a marketplace app, so an opening can appear and be claimed without showing up where most diners look. That is a large part of why this neighbourhood feels harder than its numbers. We watch all four platforms on the same cycle.

The percentage is the share of dates in the current booking window that had a bookable table, so a lower number is a harder room. It says nothing about which hour opened, and in this neighbourhood that is where the real information is: 95% of Cotogna's openings are before 6 PM, while 40% of Quince's land between 7:00 and 8:30 PM.
Here are the four, hardest first, with the measurement that should actually drive your plan.
Verjus, French, SevenRooms. 10% for two and 7% for four, 2 of 30 dates for four, on a window of about a week. It has not opened a table on Sundays or Mondays in our checks, which usually means it is closed then.
Cotogna, Italian, SevenRooms. 20% for two and 17% for four, and 95% of its openings are before 6 PM.
Quince, Italian, SevenRooms. 40% for two and 40% for four, with 40% of openings in the 7:00 to 8:30 PM band and openings recorded from 5:00 PM to 8:00 PM.
Kokkari Estiatorio, Mediterranean, OpenTable. 100% for two and 100% for four, 30 of 30 dates, and the only room here that is not a wait.
Verjus is the tightest calendar in Jackson Square and the shape of it explains why. Its own reservations page puts the window at 7 days, so there is no planning a month out: a date appears about a week before service and is gone. We have logged 189,269 open slots across 256,626 checks, and 64% of them are before 6 PM.
The single most common opening is 4:00 PM, and openings run from 3:00 PM to 9:30 PM. Only 8% of everything that comes free falls in the 7:00 to 8:30 PM band, and 23% is late. So the honest version of Verjus is a wine bar that opens its afternoon and its last seating, and rarely the middle.
The week is low. Saturday returned an open table on 22% of checks and Friday on 10%. It has not opened a table on Sundays or Mondays in our checks, which usually means it is closed then. We have logged 122 release events over 56 observation days, which is consistent with dates rolling in daily rather than arriving in a batch.
Because the runway is a week, the usual advice about being ready for a release is worth less here than anywhere else in the neighbourhood. A Verjus table is a short-notice table, which makes it the clearest case in Jackson Square for watching rather than planning.

Cotogna reads 20% for a two-top and Quince 40%, and the hours they open could hardly differ more. At Cotogna, 95% of the 429,960 openings we have logged are before 6 PM, with 3:00 PM the most common, and 1% fall in the 7:00 to 8:30 PM band. At Quince, 40% of 456,188 openings land in that band, 5:00 PM is the most common, and openings run from 5:00 PM to 8:00 PM.
So when our data says a Cotogna date is bookable, the table on offer is usually mid-afternoon. That reframes its number in both directions at once. It is not a locked door, and it is also not a string of chances at a Friday dinner. Quince is offering the part of the evening everybody actually wants.
Party size splits them too. Quince read 40% for a four-top against 40% for a two, 12 dates of 30 against 12. Cotogna read 17% for four against 20% for two. Two people willing to book a four-top should price that search at a three-Michelin-star restaurant, and it costs nothing.
The weeks differ as well. Cotogna returned an open table on 62% of Wednesday checks and 7% of Saturday checks. It has not opened a table on Sundays in our checks, which usually means it is closed then. Quince ran at 57% on Wednesday against 8% on Saturday. It has not opened a table on Sundays or Mondays in our checks, which usually means it is closed then. Pick each room's best night; the worst one is a wait at both.
On release, Quince's own site says reservations are released on the 1st of the month prior, which makes one morning a month the widest choice of dates you will see. For Cotogna we have logged 373 release events across 62 observation days without establishing a published hour we are willing to print.

Kokkari Estiatorio is the easy table in Jackson Square, not the hard one. It showed a bookable two-top on 30 of the 30 dates in its window and a four-top on 30, and 17% of its 2,874,208 logged openings fall in the prime band, with 9:45 PM the most common single time and openings recorded from 11:30 AM to 10:00 PM.
What makes it unusual is the flatness. Across our whole record, the share of checks that returned an open table runs from 85% on Thursday to 81% on Monday. Most other rooms in this cluster have a weekday they hand you and a weekday they refuse. Kokkari treats its nights much the same.
That also shows the difference between the two measurements we publish. 30 of 30 dates opened at some point, while 83% of individual checks found a table. Availability comes and goes through the day rather than sitting there, so if you looked once and saw nothing, the useful conclusion is to look again rather than to give up.
The booking rule is worth knowing: an archived version of the restaurant's reservations page says OpenTable carries 30 days, while calling the restaurant directly reaches up to 60. Where a restaurant offers a longer runway by phone than online, the online calendar is not the whole picture, and we only measure the online one.

Verjus, Cotogna and Quince all book through SevenRooms, which is usually reached through the restaurant's own website rather than a marketplace app with your card already saved. A table can appear on one of those pages and be claimed without ever surfacing where most diners are looking. Only Kokkari, the easiest room here, sits on OpenTable.
That is why Jackson Square feels harder than its numbers. The percentage measures whether a table existed. The platform decides whether you had any chance of seeing it. We watch SevenRooms on the same cycle as Resy, OpenTable and Tock, which is the only reason this page can tell you Cotogna's most frequently open time at all.
It also explains a common misreading of the neighbourhood. People conclude that the Tusk restaurants never open because they checked an app those restaurants are not on. Our record says Cotogna opens regularly, mostly in the afternoon, and that its Saturday is genuinely close to shut.

One watch across all four platforms removes the question of which app a given restaurant happens to use.

Against New York, even this holds up well. Across the 60 San Francisco rooms we measure the median is 65% and six read 0%. Across the 84 New York rooms the median is 35% and 23 read 0%. The West Village alone averages 12% across eleven rooms, seven of them at zero, against Jackson Square's 43% with none at zero.
Which points at the plan. In Jackson Square, book the room whose openings match the hour you want: Quince for dinner, Cotogna for an afternoon, Kokkari when the date is fixed. Then put a watch on the night you actually wanted, because a low-percentage room is a cancellation story, not a release story.

We track 284 restaurants across four cities, and these four rooms account for 1,078,344 of the 61,530,416 availability checks we have run. Table Alert advertises 62,198 restaurants. Nobody watching 62,198 rooms can tell you that 95% of Cotogna's openings are before 6 PM, or that Quince's four-top calendar runs at 40% against its two-top's 40%. We gave up coverage to know the rooms we cover.
The percentages are a point-in-time reading of each restaurant's current booking window, dated 19 October 2026. The slot counts, weekday counts and release-event counts are cumulative across the whole time we have been watching, because the raw snapshots are pruned after a few days while the counters keep running. Where we do not have a release hour we are willing to defend, as at Cotogna, we leave it out rather than guess.
