Kumiko does not publish a release time or a booking window, and we will not invent one. Its reserve page explains how each room books instead, and what its calendar has actually shown is below.
SevenRooms. Kumiko's reserve page splits into three rooms, each with its own SevenRooms link: the dining room with its tasting menu, the bar with the full dinner menu, and a ten-seat whisky bar open Thursday to Sunday.
For the dining room it says: "Reservations are strongly recommended for parties larger than 2." It also says "Reservations are non-refundable." For parties of six or more it points you to its events team.
Yes, at the bar. Kumiko's reserve page says: "Walk-ins welcome on a first-come basis. Reservations encouraged on weekends. Maximum party size: 2." For the dining room it says walk-ins are welcome based on availability, with a waitlist.

Treat that as an early reading. Chicago joined our tracker in late September 2026 and Kumiko was added at the end of that month, so the figure rests on the first few days of checks rather than months of history, and it will move as checks accumulate. We track 68 Chicago restaurants in total.
Kumiko won the James Beard Foundation's Outstanding Bar award in 2025.
Pick the room first, then check its SevenRooms calendar. A pair can also try the bar as a walk-in, early in the evening on a weeknight.
If the dates you want are gone, the route in is a cancellation. Plans change and seats come back onto the calendar at hours nobody predicts. SnagRes checks Kumiko's calendar continuously and texts or emails you the moment a seat opens on a date you picked.
SnagRes never books for you, never holds a table and never resells one. It tells you a table is free, and you book it yourself with the restaurant.
