We do track and measure the other San Francisco three-star rooms, including Benu, Saison and Quince, and we would rather name that gap than borrow a number from a similar room.
Tock, and only Tock. Because Tock is a ticketing platform, a seat is a prepaid ticket rather than a held reservation. Twenty-two of the 285 restaurants we track book this way, and they share the same pattern: block releases, fast sell-outs, and returned tickets that go back on sale instead of into a queue.
Yes, that is how a Tock ticket works: you pay when you reserve rather than at the end of the meal. We do not publish the ticket price or the cancellation terms, because those belong to the restaurant and are not something we measure. Its Tock page is the authority on both.
Rooms we actually measure. In our last read Saison was open on 15 of the next 30 dates, Lazy Bear on 14, Benu on 10 and Quince on 5, while Angler was at 22 and Boulevard at 25. Those are counts from our own repeated checks rather than impressions, which is what makes them usable as a plan B.
Not from us, because Crenn is outside the 285 rooms we watch. Where an alert does work is on the tracked rooms, where returned seats surface at hours no person can sit through: we re-check continuously and alert you the moment one opens. We never book the table, so you reserve it yourself at the restaurant's own price.
Where the terms are published, in monthly blocks. Quince's site says reservations are released on the 1st of the month prior. Saison's says dinner reservations are released at least one month out, by the 1st of the month prior. Benu's says seats are released at 10:00 AM each day up to 30 days ahead, which is the one rolling daily window of the group.
Atelier Crenn sells its seats as prepaid tickets on Tock, so a reservation here is a purchase you complete at the moment a date opens rather than a table you hold and settle at the end of the meal. It is Dominique Crenn's three-Michelin-star restaurant in Cow Hollow, and Tock is the only platform hosting its tables.
Tock is a ticketing system, not a marketplace you already keep open, which is the first thing that trips people up. Twenty-two of the 285 restaurants we track book this way, and the pattern is consistent across all of them: seats appear in blocks on a schedule, the block is claimed quickly, and the calendar then reads empty until the next one posts or somebody gives a paid ticket back.
That block shape is worth understanding even where we cannot measure it, because two of the San Francisco three-star rooms publish release terms of exactly that shape. Quince's site states that reservations are released on the 1st of the month prior. Saison's states that dinner reservations are released at least one month out, by the 1st of the month prior. A monthly block is common at this level of the city, though it is not universal: Benu's own reservations page puts its seats out at 10:00 AM each day on a rolling 30-day window instead.
The consequence for you is that the release is the whole game at a ticketed room. When a block posts, everyone who has been waiting opens Tock at once, and the Friday and Saturday seats go first. Once a batch is gone, there is no queue to join and no host working a list, because the inventory was sold rather than reserved.
For a structural reason rather than a mysterious one: a three-star tasting-menu room seats a small fixed number of guests a night, and demand at the release sits far above that number. The calendar looks empty to a casual diner most of the time not because the restaurant is closed but because everything released was claimed in the first rush.
The prepaid format then changes what an opening even is. At a restaurant where a table is held rather than bought, a cancelled booking quietly returns to the calendar. At a ticketed room, the seat somebody gives up is a paid ticket going back into the pool, bookable again by whoever sees it first. There is no hidden waitlist a host works through by hand.
Ticketed does not automatically mean impossible, and it is worth saying so, since a lot of advice treats Tock as a closed door. Lazy Bear, the two-star Tock room in the Mission that we do track, showed a bookable seat on 14 of the next 30 dates in our last read, 23%, with 5:00 PM its most frequently open time and 49% of Wednesdays open across 6,930 availability checks. The platform is not the obstacle. The size of the room and the depth of the demand are.
The same is true at the top of the San Francisco three-star list, where we do have measurements. Benu was open on 10 of the next 30 dates, Saison on 15, Quince on 5. These are rooms with reputations for being unbookable, and every one of them had nights on the board when we last looked.
Atelier Crenn is not one of the 285 restaurants we check, so this page carries no open rate for it, no most frequently open time, no weekday pattern and no release hour. We are not going to borrow a number from a comparable room and present it as Crenn's, and we are not going to describe its calendar in adjectives to cover the gap.
That matters because the numbers on the rest of this site are not estimates. When we say Benu has only ever opened at eight distinct clock times in 158,010 recorded slots, or that a Thursday table there turns up at roughly twice the rate of a Friday one across 285,857 checks, those came from reading the same calendar over and over for months. We cannot say anything of that kind about Atelier Crenn, so we say nothing of that kind.
What a tracked room gets you is specificity. Quince, three stars and a monthly block release, showed a table on 15 of 30 dates for two people and 13 of 30 for four, with 8:00 PM its most frequently open time and Thursday running at 63% of checks against Saturday's 19%. That is the level of detail this page would carry if Crenn were on the list.
So treat everything above about Tock, block releases and returned tickets as mechanics, which they are, and treat the sections below as a plan rather than a prediction. Mechanics we can explain from how the platform works. Odds we will only quote where we have counted.

Two routes, and both of them need preparation rather than luck. The first is the release: have a Tock account with payment already saved, know the date you want, and be on the page when a new block posts. Entering card details for the first time while a block is live is how people lose the seat they had in the cart.
The second is a returned ticket, and for most diners this is the realistic one. Guests do give up prepaid seats as plans change, and a returned ticket does not go to a queue, it goes back on sale. A ticket released at four in the afternoon on a Tuesday is invisible unless something is watching for it, which is the whole problem with a hand-refreshing strategy at a room like this.
Be flexible in the ways that cost you least. A Wednesday or Thursday is a materially different proposition from a Saturday at every comparable room we measure: Quince runs 55% of Thursdays against 9% of Saturdays, Saison 85% of Wednesdays against 47% of Saturdays, Benu 72% of Thursdays against 49% of Fridays. Party size is worth testing too, since at both Quince and Benu the four-top calendar was open on more dates than the two-top.
And decide in advance what you will do if the answer is no, because at a ticketed three-star room the answer is no most of the time. A plan B you picked calmly beats a Saturday spent refreshing.
Set up Tock with saved payment before a block posts, not while one is live.
Prepare for the initial release, and keep watching for returned tickets, which go straight back on sale.
Ask for a Wednesday or Thursday, which at every comparable room we measure is far more open than a Saturday.
Test four people as well as two, since the four-top calendar is the easier one at both Quince and Benu.
Pick a plan B before you need it, from rooms whose availability is actually measured.
Sold out is the normal state at a three-star room, not a failure on your part. The useful question is not how to force that particular door but which comparable San Francisco dining room will actually have a table on the night you have already set aside.
We can answer that with numbers rather than opinions. In our last read, Saison was open on 15 of the next 30 dates and 17 of 30 for four people. Benu was open on 10 of 30, with 8:00 PM and 5:00 PM together carrying two thirds of everything that opens there. Lazy Bear, also on Tock, was open on 14 of 30. Angler, the Embarcadero seafood room from the Saison team, was open on 22 of 30, and Boulevard on 25 of 30.
Because Atelier Crenn is not on our list, we cannot watch it for you, and we would rather say that than imply otherwise. What we can do is watch the rooms that are, around the clock, and tell you the moment one of them opens, which is a concrete offer rather than a hopeful one.
It is also worth knowing what the alternative looks like in this category. TableSwap charges $75 per successful reservation, which is selling the seat itself, and that is the practice New York's 2024 reservation law was written to stop. We never book a table, never hold one, and never take a cut of one. You reserve it yourself, in your own name, at the restaurant's own price, which is the only version of this that stays clean at a room where a ticket has resale value.

The list is short on purpose, and that is the trade we have made. A service advertising 62,198 restaurants cannot tell you which quarter-hour a given room opens, or that its Thursdays run at twice its Fridays, because nothing is checking any one of those 62,198 rooms often enough to know. We would rather be able to say something exact about 285 rooms than something vague about all of them.
Atelier Crenn is the cost of that trade, and this page is what honesty about it looks like: the mechanics explained, the comparable rooms measured, and the gap named instead of filled with a guess. If Crenn joins the list, the numbers will appear here and they will be counted, not estimated.
