What changes on the holiday is that many rooms close or switch to a set menu, so a date that appears with no times is the restaurant's hours, not a sold-out sign.

The biggest single morning is Tuesday, 27 October, when 37 rooms on a 30-day window reach the date, Carbone, Cote and Torrisi among them at 10 AM. The 14-day rooms follow on Thursday, 12 November (31 rooms), the 21-day rooms on Thursday, 5 November (19), and the monthly-release rooms, Eleven Madison Park and Per Se included, on Thursday, 1 October (13). Hours are local to the restaurant's city.

The rooms that release by the month reach Thanksgiving before anyone else, and two of them already have. House of Prime Rib takes bookings a year out, so its Thanksgiving calendar opened last Thanksgiving and reads 0% for two today. Elena's, on a 90-day window, reached the date on Friday, 28 August and is still 100% open. Everything else below is still ahead of you.

Most of the hard New York rooms sit on a 30-day window, which puts their Thanksgiving drop on the same Tuesday morning. That is the morning to be at the screen for Carbone, Cote, Torrisi, The Polo Bar and Via Carota, all of which release at 10 AM, and for Benu and State Bird Provisions in San Francisco. The rooms below are the ones that have been hardest in our checks, plus State Bird Provisions, which publishes its own noon release, with the day and hour each reaches 26 November.

The short-window rooms are where a Thanksgiving table is decided in the last three weeks. 4 Charles Prime Rib and Monkey Bar reach the date on Thursday, 5 November at 9 AM. The two-week rooms, Semma, I Cavallini and L'Artusi among them, reach it in the week of 9 November. Don Angie, Naks and Dhamaka do not reach it until the Thursday before, and Bistrot Ha, on a six-day window, not until the Friday.

Bistrot Ha: Friday, 20 November at midnight, the last drop of the season.
We cannot tell you until the calendar reaches the date. Many restaurants close on the day, some switch to a set menu, and a few serve lunch only, and none of that is visible before the drop. What we can tell you is how each room treats an ordinary Thursday: across the 284 rooms, the Thursdays we checked averaged 63% open for two, against 56% on Saturdays and 49% on Sundays. Thursday is, on the numbers, the second-easiest night of the week in these rooms.
So the drop date is a look, not a promise. If the date appears with times, book it. If it appears with no times at all, the room is closed or serving a menu it books elsewhere, and the useful pivot is Wednesday, 25 November, the night before, or the Friday and Saturday after, which for the 30-day rooms open on the following mornings.
Thursdays average 63% open for two across the rooms we track; Saturdays 56%.

A date that appears with no times is the restaurant's holiday hours, not a sold-out sign.
Find your room in the lists above, be on its platform at that hour with your party size already set, and take any time on the day you can get. If the date is sold out by the time you look, or was never served, set an alert for 26 November and for the Wednesday before. Cancellations at these rooms cluster in the last two days before a date, when the people who booked a month early admit they are cooking after all, and that window is exactly the one nobody can watch by hand across a holiday week.
