Every room we track opens its book a fixed number of days ahead at a fixed hour, or on the 1st or 15th of the month before, and that rule decides when Christmas Eve, New Year's Eve, Valentine's Day or Mother's Day becomes bookable there. We hold a rule for 156 of the 284 restaurants we track and turned each one into a date for the four holidays below. Hours are local to the restaurant's city.
Three rules cover most of the list. A 30-day window, the most common, means Carbone, Cote, Torrisi, The Polo Bar, Via Carota, Benu and State Bird Provisions all reach a holiday on the same morning, 30 days before it. A 14-day window, the next most common, means I Cavallini, Semma, L'Artusi and Una Pizza Napoletana reach it two weeks out. A monthly release, which Eleven Madison Park, Per Se, Quince, Saison, Ju-ni and Kiln use, opens the entire month on the 1st of the month before, so a December holiday opens on 1 November.

The Four Horsemen releases 29 days ahead. Lilia 28 days ahead at 10 AM.

Eleven Madison Park and Per Se open the whole following month on the 1st. Lazy Bear, Naides and Sorrel on the 15th.
Benu releases 30 days ahead at 10 AM. State Bird Provisions 30 days ahead at noon.
Christmas Eve is Thursday, 24 December 2026. The 37 rooms on a 30-day window reach it on Tuesday, 24 November, two days before Thanksgiving, which is the morning a lot of people are not thinking about December. The 14-day rooms reach it on Thursday, 10 December (31 rooms), the 21-day rooms on Thursday, 3 December (19), and the monthly rooms release all of December on Sunday, 1 November (13). Christmas Day, the Friday, follows each of those by one day.

New Year's Eve is Thursday, 31 December 2026. The 30-day rooms reach it on Tuesday, 1 December (37 rooms), the 14-day rooms on Thursday, 17 December (31), and the monthly rooms opened it with the rest of December on 1 November. Many restaurants switch to a set menu or a ticketed seating that night, and a ticketed seating can appear on a different page from the usual calendar, so a date that shows no times is worth a look at the restaurant's own site before you give up on it.

Whether they open for the holiday is the restaurant's call, and it will not show until the calendar reaches the date.
The 30-day rooms reach it on Friday, 15 January (40 rooms, Lazy Bear, Naides and Sorrel included on their 15th-of-the-month rule), the 14-day rooms on Sunday, 31 January (31), and the monthly rooms on Friday, 1 January (14). Atera: better on Sundays than any other night, at 82% of Sunday checks against 60% overall.
Huso: 92% of Sunday checks open. Jungsik 82%. Icca 97%.
Eleven Madison Park and Per Se: Friday, 1 January at 10 AM, the whole of February.
Gary Danko: 100% of Sunday checks open, reaching the date on Wednesday, 16 December.
Mother's Day 2027 is Sunday, 9 May, so the same Sunday caution applies, with one difference: it is a lunch holiday, and 88 of the rooms we track have shown a table at or before 1 PM. The 30-day rooms reach the date on Friday, 9 April (37 rooms), the 14-day rooms on Sunday, 25 April (31), and the monthly rooms on Thursday, 1 April (13). The rooms that serve lunch and open on Sundays are the ones to plan around.

If the holiday appears with no times, the room is closed or serving a set menu it books elsewhere, so check its own site before you move on. If it appears and sells out, set an alert on the date: the tables that come back at these rooms come back in the last two days, when plans made a month earlier fall through, and that is the window nobody can watch by hand across a holiday.
