Room by room. The busiest morning is Tuesday, 24 November, when the 30-day rooms reach Thursday, 24 December, Carbone, Torrisi, The Polo Bar and Via Carota among them at 10 AM. Per Se and Eleven Madison Park release all of December on 1 November, and the short-window rooms, Don Angie among them, not until December.

What the drop shows you is the restaurant's holiday plan: a date that appears with times is bookable, and a date that appears with none is closed or booked elsewhere, not sold out.
Christmas Day itself, Friday, 25 December, reaches each calendar exactly one day after Christmas Eve does, at the same hour. Far fewer of these rooms serve on the 25th.
