For a Michelin-starred dining room of this size that is a genuinely open calendar, and it barely tightens for a bigger party: a four-top had a table on 26 of those same 30 dates, an 73% rate.
That figure is not an impression. We have run 257,300 availability checks on Rich Table on OpenTable, around the clock, and the reading has been steady enough that it moves by a date or two rather than by a tier. We watch 284 restaurants in New York, San Francisco, Los Angeles and Chicago, which is a deliberately short list. It is the only way to say something this exact about any single room.
What counts as open here is narrow, and worth stating plainly. A date is open when a real party could have booked a real time on it at the moment we looked. It is not a rumour from a booking forum, not an average across a city, and not a restaurant telling us how its own calendar behaves.
So the honest summary of Rich Table is a split one. The date is easy and the hour is not, and the difficulty lives entirely in the second half of that sentence.
Late. Of the 1,502,369 open slots we have logged at Rich Table, 49% were 9 PM or later, and only 23% fell in the 7:00 to 8:30 PM stretch most people are actually aiming at. The single most frequently open time is 9:15 PM, which by itself accounted for 252 of those slots.
The early edge is deeper than most people expect. 14% of open slots were before 6 PM, with 5:30 and 5:45 PM the two richest pockets, and the earliest seat we have ever recorded is 5:00 PM. The latest is 10:00 PM. It is the middle of the evening that is thin, not the ends of service.
Hayes Valley explains a good deal of that shape. The symphony, the opera and the ballet all sit within a few blocks, so the 6 and 7 PM seats go to people with a curtain to catch, and what survives on the calendar is the table after the curtain goes up.
The practical version: if you can eat at 9:15 PM, Rich Table is not a hard reservation at all. If you need 7:30 PM on one specific Saturday, you are competing for roughly a quarter of the inventory, and you should treat the night like a much harder restaurant than the 90% headline suggests.

Those weekday rates read lower than the 73% headline for a reason worth being clear about. The 73% describes the window as it stands now. The weekday rates cover the entire history of our checks, including stretches when this calendar was far tighter than it is today, so they are the right tool for ranking nights against each other and the wrong tool for predicting next Thursday.
Ranked that way the shape is Thursday at 66%, then Friday and Wednesday at 60%, Saturday at 78%, Sunday at 83%, Monday at 81%, and Tuesday last at 13%. The weekend is not the problem at Rich Table. The start of the week is.
Put that beside the slot data and the easiest booking in the building is a Thursday at 9:15 PM. The hardest is a Tuesday at 7:30 PM, and if that is the seat you want, plan on catching a cancellation rather than on booking it outright.
Thursday is the most open night in our history at 66% of checks, and Tuesday the tightest at 50%.
Book the date directly when your night is flexible, since 27 of the next 30 dates had something on them.
Aim at 9:15 PM for the easiest seat in the house, or 5:30 PM if you would rather eat early than late.
Treat a fixed prime-time date as the competitive case, and be there as it enters the 30-day window in the 8 PM hour.
