Among the Fillmore rooms we measure, the hardest by our last reading is State Bird Provisions (50%), and the other two read The Anchovy Bar (100%) and Copra (93%). State Bird Provisions is the most sought-after name in the neighbourhood; we began measuring its OpenTable calendar in October 2026, so for now we describe it by its published rule: noon Pacific, 30 days ahead, with seats kept for walk-ins.
Be on the reservations page at statebirdsf.com at noon Pacific exactly 30 days before the date you want, signed in to OpenTable with your party size chosen, because the restaurant's own page says that is when tables are released. If the night is gone, arrive a few minutes before the 5:30 PM opening for the seats held back for walk-ins, or watch the night for a cancellation on OpenTable.
No. It means a table has never sat unclaimed long enough for one of our checks to see it. Most of the hardest rooms still let tables through: 148 Don Angie checks in New York have found a table, most often at 10:00 PM, and 131 at House of Prime Rib. A table that exists for a few seconds at an hour nobody asked for is still a table.
Not hard. The Progress read 87% of dates open for a two-top and 70% for a four. Wednesday returned open on 100% of our checks and Saturday on 66%. Its most common opening is 9:30 PM, and 29% of everything it opens is at 9 PM or later, with 36% in the prime band.

We track four Fillmore restaurants and hold current measurements for four of them. By the share of dates in each window with a bookable two-top, those rooms run State Bird Provisions (50%), The Progress (87%), Copra (93%) and The Anchovy Bar (100%), an average of 83% against 60% for San Francisco as a whole.
The fourth is State Bird Provisions, and this page describes it by what the restaurant publishes rather than by a figure. It books on OpenTable, through the reservations page on its own website. We began reading that OpenTable calendar in October 2026, and its measured figures will join this page once there are enough of them to mean something.
So the measured story here is about three restaurants where you can pick a night, pick a time near eight o'clock, and book, and one celebrated room with a published noon release and seats held back for walk-ins. Knowing which kind of room you are dealing with is most of the plan.

The restaurant's own reservations page sets the rule: tables are released at 12:00 PM Pacific, exactly 30 days before the date you want, through an OpenTable widget on statebirdsf.com. Each day at noon one more date joins the calendar, so a Saturday dinner becomes bookable at noon on the Thursday 30 days earlier.
A fixed-minute release concentrates everyone who wants that night into the same moment, which is why the practical advice is to be ready before noon: signed in to OpenTable, party size chosen, the date already in mind. If you have been looking for State Bird on Tock, that is not where its tables are.
The other way in is the door. The same page says the restaurant keeps some seating for walk-in guests, first come, first served, and suggests arriving a few minutes before the 5:30 PM opening, earlier on weekends. For one or two people on a weeknight that is a real plan rather than a long shot.
And because plans change, tables also come back after the release. A watch on the nights you want catches a cancellation when it reappears on OpenTable, which is the third route and the one that does not depend on being at a screen at noon.

The Progress read 87% of dates open for a two-top and 70% for a four, 26 and 21 dates of 30. That is worth knowing because the usual advice runs the other way: at many hard rooms, asking for four opens more dates than asking for two. Here, check which size reads higher before you pick.
The hour is the other thing to plan around. Its single most common opening is 9:30 PM, out of 401,012 logged openings, and 29% of everything free is at 9 PM or later. A further 36% falls in the 7:00 to 8:30 PM band, so there is a real prime-time chance here.
The week has a shape too. Wednesday returned an open table on 100% of checks and Saturday on 66%. Its own reservations page says dates release at 9:00 AM on a 30-day window, and we have logged 163 release events across 60 observation days.

These two are the reason the Fillmore reads so high. Copra read 93% for two and 93% for four, The Anchovy Bar 100% and 100%. Copra puts 34% of its openings in the 7:00 to 8:30 PM band and The Anchovy Bar 54%. This is what an easy restaurant actually looks like in our data: not just often open, but open when you want to eat.
Copra has produced 6,029,147 logged openings, with 9:15 PM the most common and 34% before 6 PM. The Anchovy Bar has produced 972,878, with 6:45 PM the most common. Its week is close to flat: from 100% on Thursdays to 93% on Mondays.
Copra's week runs from 100% on Sundays to 87% on Fridays. Both book on OpenTable: Copra's listing shows a 9:00 AM release on a 30-day window, and The Anchovy Bar's own reservations page says noon on 30 days.
For either of these, an alert is a convenience rather than the way in. If a particular Saturday at 7:30 is full when you look, shifting fifteen minutes usually solves it, which is not a sentence we can write about many restaurants.

Every room here runs a 30-day window, which is unusually tidy, and the difference is the hour. State Bird Provisions goes up at noon Pacific, exactly 30 days out. The Progress and Copra both release at 9:00 AM. The Anchovy Bar releases at noon. All four book on OpenTable, and all four rules come from the restaurants' own pages or their OpenTable listings.
Our own logs show what happens next at the three rooms we have measured for longest. Across 319 release events logged in the neighbourhood, The Progress accounts for 163, Copra 65 and The Anchovy Bar 63. State Bird's count starts with the OpenTable calendar we began reading in October 2026.
At those three the release is close to a formality and the calendar stays open for days. At State Bird the noon release is the moment to be ready for, with the walk-in seats and returned cancellations as the fallbacks.

Which leaves a simple plan for these four blocks. Book Copra or The Anchovy Bar when the date matters. Take The Progress on its best night or accept a late seating. And for State Bird Provisions, be on its reservations page at noon Pacific exactly 30 days out, or arrive just before 5:30 PM for the walk-in seats, and let something watch for cancellations in between.

We gave up coverage in order to know the rooms we cover, and when a room moves to a new booking listing, as State Bird Provisions did, we start its record again on the listing it actually uses.
The percentages are a point-in-time reading of each restaurant's current booking window, dated 19 October 2026. The slot counts, weekday counts and release-event counts are cumulative across the whole period we have been watching, because the raw snapshots are pruned after a few days while the counters keep running. A zero here means zero in our record, not a claim about every table the restaurant has ever seated.
